under the stern gaze of a stern painting of a very stern man. The soft,
crepuscular gloom is broken up by the glare
of table lamps, indecorously bright, while a loud
soundtrack of indolent, indeterminate beats throbs in the background.
The whole place is scented with gilded ennui.

Our fellow diners are two young South Korean women of pale, luminescent beauty, clad in diaphanous couture.

They don’t speak, rather communicate entirely via camera phone.
Pose, click, check, filter, post. Immaculate waiters hover in the shadows.

We sip ice-cold vodka, and eat a £77 caviar and smoked-salmon Kaspia croque monsieur that tastes far better than it ought
to. Next door, a large table fills with a glut of the
noisily, glossily confident.

We’re looked after by a wonderful French lady of such
effervescent charm and charisma that had she burst into an impromptu performance of ‘Willkommen’, we would have
barely blinked. Baked potatoes, skin as crisp as parchment,
insides whipped savagely hard with butter and sour cream, are a
study in tuber art. A cool jet-black splodge of oscietra caviar, gently
saline, raises them to the sublime. Only the price, at just under £150 each, is ridiculous.
But there are few better dishes on earth. I’d eat this
every day if I could. But I can’t. Obviously.
That’s the problem with caviar. One taste is never enough.

the House of Representatives and the Senate – revealed almost 93 per
cent of the nation’s leaders have been ‘gifted’
membership to the lavish, all-inclusive lounge.

The high profile ranks of government giftees include Prime Minister Anthony Albanese as well as every member
of his 22-person Cabinet, his seven-person Outer Ministry and all 12 assistant ministers.

ANGELA HARTNETT’S BEEF & VEAL MEATBALLS
Meatballs are super-quick to make for a weeknight supper and there are many ways to serve them
(see tip). The veal in these gives a lightness to the result, but
you can swap it out for all beef, or flavourful pork mince.
This is a good way to use up any day-old bread hanging around.
The recipe is easy to double up on and freeze so you have a meal for
an emergency.

SERVES 4

4 tbsp olive oil, plus extra for the onion

1 onion, finely chopped

2 garlic cloves, chopped

400g tin chopped tomatoes

200g white bread (day old, if possible)

whole milk (enough to soak the bread)

500g beef mince

250g English veal mince

2 tbsp finely grated parmesan, plus extra to serve

4 anchovies, finely chopped

2 tbsp chopped flat-leaf parsley

salt and freshly ground black pepper

350g dried spaghetti, to serve (optional; see tip)

1 First make a tomato sauce. In a saucepan, heat a dash of olive oil over
a medium heat, then add half the chopped onion and
half the garlic, then sauté for 10 minutes to soften.
Add the tomatoes and when the liquid starts to bubble, reduce
to a simmer and leave to cook, stirring occasionally (about 20
minutes, to create a thick sauce), while you make the meatballs.

2 In a bowl, soak the bread in the milk until soft. In another bowl, mix the beef, veal, parmesan, anchovies, half the parsley and the
rest of the onions and garlic. Then add the soaked bread, lightly
squeezing any excess milk from it first. Mix well and
season with salt and pepper. Mould the mixture into 12-14 meatballs.

3 Put the 4 tablespoons of olive oil in a large frying pan over a medium heat.

When hot, add the meatballs, turning (for about 5 minutes) to ensure they colour all over.
If necessary, cook in batches so they are not all squashed together, setting each batch aside on a plate while you cook the remainder.

4 To finish, remove the meatballs from the pan and set aside.
Pour the tomato sauce into the frying pan over a medium heat.

Put the meatballs back into the pan for a further 4-5 minutes to cook through.
Sprinkle with the remaining parsley before serving.

TIP You can serve the meatballs as they come, or on top of spaghetti.
If you would prefer the latter, cook the pasta according to the packet
instructions until al dente. Drain it in a colander, reserving a cupful of the cooking water to loosen the
meatball sauce if necessary, and then transfer it back to the pan and toss it with a little olive oil and butter.
Put the spaghetti on a serving plate and top with
the meatballs and sauce. Finish with a drizzle of olive oil and a sprinkle
of parmesan.

Scientists have found that the ‘cataclysmic’ Minoan eruption of Thera happened a century before previous estimates. It is now believed
the eruption took place between 1,627 and 1,600 BCE, more than a century earlier than the 1,500 BCE date suggested
by archaeologists (stock)

Charred olive wood is found throughout the archaeological record and provides a consistent way
to date ancient events, especially in the Mediterranean region.

The latest research took samples from an ancient piece of wood unearthed in fragments of volcanic rock and compared it
to two modern-era examples – one from a living tree and another from
a specimen that had died a few years earlier.

Dr Elizabetta Boaretto of the Weizmann Institute of Science in Israel took 20 samples
from the living tree and 11 from the dead branches, which had been cut in 2013.

These samples were used to asses how olive trees grow, and apply the latest findings to the
ancient sample unearthed in Santorini.

Until now, it was believed the outermost ring of wood in the
3,500 year-old olive tree sample was formed just before the branch was
buried alive by the eruption.

According to the study: ‘The outermost rings of an olive branch buried during
the Santorini volcanic eruption is regarded as crucial evidence for the date
of this cataclysmic event.’

However, Dr Boaretto and her colleagues discovered that
olive trees are different to most trees and
do not produce visible growth rings each year.

Using this found knowledge, scientists tested other samples from
the ancient olive tree branch to discovered
parts of the branch almost a century older than previous estimates for
the volcanic eruption on Thera.

the samples used by the researchers. They say the growth pattern of the olive tree was unusual
and therefore may mean the original estimation of the Santorini eruption was incorrect
